My mom makes this famous and easy to make noodle salad, but it is also great served with steamed asparagus and noodles. It is a perfect starter for a bowl of fresh noodles, and a great way to use leftover cooked vegetables like potatoes and sweet corn.

It seems that one of the biggest challenges in learning how to make and serve this dish is that it’s actually an Asian thing. Asparagus is the most difficult vegetable to get right, and so its very difficult to get a good noodle salad right. I really recommend that you give it a try, but if you can’t find asparagus, you can always use baby potatoes and corn.

I’m not sure if that is a common misconception or not, but if you ask a Vietnamese student what they think best when it comes to serving noodles, they will invariably say to serve them with a side of meat or fish. So if you are eating noodles, make sure that you have extra vegetables on hand, and that the meat or fish is cooked thoroughly.

I see this as a very mixed bag of things. On one hand, this is a very good noodle salad. On the other hand, I think these noodles are just the “dirtiest” noodles I have ever eaten. Maybe thats why I am not impressed.

The noodles in the new trailer came from the Huiwen River, which is famous for its noodle salad (which is basically noodles covered in a spicy sauce). I don’t know if Im surprised, but I think they look pretty good. Though, I really do wish that the texture of the noodles was more like the ones I had in Taipei.

I’ve eaten noodles in Taipei with a lot of success. It’s a tradition (not a necessity) to have noodles with a sauce on them in Taipei. The sauce is usually a spicy bean paste (although there’s actually a recipe for a plain, light sauce that works just as well) and the noodles are usually thick and chewy. It’s a very good thing to get that “one bowl of noodles” from an actual place.
